Couple of things I do that improve taste.
I don't dong em. The animal libbos will be after me but I cut their throat & let them bleed out.
On the cutting board I use one side for filleting & skinning & the other side (or a seperate board) for cutting the cleaned fillets up (with lots of water keeping things & my hands clean). This keeps the slime away from the flesh & definitely improves flavour.
