    Just wondering what is the best way to prepare and cook a snook and do they handle being frozen.I've been told that you can't freeze snook and you should eat it cold after cooking ,is this correct?

    Snook is not much good after freezing. My favorite way to eat it is smoked. If you get them regularly, buy one of those cheap hot smokers and give it a go. It lasts for a few days in the fridge after smoking and is a good entre when coupled with a couple Crown Largers!

    Try preparing the Snook, then place it in a container of salt water and freeze. Thaw out in the fridge.

    This works for Tailor, but never tried it on Snookies, should work the same ??? ??? ???

    Caught a couple of 5/6kg fellas at SWR in Feb. Fillted and skinned em and froze them in airtight container.
    Only got them out 2 days ago and well it wasnt fresh snook You can tell the difference but they seemed ok.
    Fresh there is nothin better then steamed spottie fillet covered in creamy white wine and garlic sauce with steamed rice. Feel like gettin the rig back up the rocks and gettin some freshies..................
    Smerl is right though you have to try them smoked, warm and cold its tastes fantastic.

    Thanks guys for all the input. I have a couple of whole fish in the freezer that I didn't have time to fillet (they are gutted, gilled and bled clean though) and they've only been there a week at most so I guess the sooner I get them back out and do something with them the better by the sounds of it. I don't have a smoker though so we'll just have to try and get a bit creative .
