Yep have had that before, but not from gutting fish. When I lived in Sydney & used to go fishing, it would happen whenever we would use pilchards. Not only me, mind you but a few mates as well. They used to peal, but only the tops of my fingers & they would get dry as well.
Have never had it happen up here though.
Maybe you might want to try barrier cream on your hands before gutting fish? or better still, get your mates to do it
Don't suffer myself, but I have a mate who's hands burn and itch like hell for hours after he cleans fish. ??? [smiley=bigcry.gif]
Appears you may have an allergy there??,you try wearing gloves come gut time???..
Also there is a method of gutting your fish without burying your fingers into the gut but a tad hard for me to explain??..
See if i cant take some Pics for you next time i'm cleaning a catch n keeping some for the grill..

my fingers don't peel but they get little sore's almost like when you get a small sliver of wood in your finger. i helped gut fish for a king mackrel tournament for several years. i'd gut 3-4 thousand pounds of mackrel a day. by the end of the day those sore spots would apear. a friend of mine told me to wash my hands with bleach when i get thru gutting fish. it works like a charm.

Sounds serious , I think you should give all your Rods, reels and boat (if any) to me and give up fishing before it is too late and your hands fall off. [smiley=worried2.gif]
After a few days fishing I often get irritation arond my nails or any cuts. Antiseptic hand wash fixes it up real well.
