Is it OK to freeze Mahi Mahi ?

Read recently that freezing mahi mahi spoils the flavour. Anybody had this experience?

Yeah the practice down here seems to be take one only and eat it fresh. But Googling, it seems that its fairly common commercial practice to freeze them. Maybe thats why they have tasted crap a couple of times I have eaten them at restaurants.

And no - haven't seen any yet - but I'm hanging out - they are fairly high on my best-tasting list - and such a buzz to see in the water.

If i was going to freeze them i would wash the fillets well in clean salt water and pack still wet . i think when you get home and wash in fresh water then freeze that this contributes to the spoiling of the taste. I do notice this with tailor and always fillet and pack on the beach.

any saltwater fish washed in saltwater does not taste as good. I would not freeze dolphinfish fresh is best and if you catch a few treat the neighbours rather than freeze.
