    Re: Filleting fish professionally

wait for a charter to come back in and watch the deckies go to work on the catch.
i learnt heaps by doing this. these guys are so fast.
and the other thing was they normaly have a range of different fish so you can see how to deal with each type.
if you give them a beer they might even give you a few tips.

Yeah I'll help you too Volvo, I'll hold the reflective umbrella up so that we get just the right amount of reflection to pick up your rugged features while highlighting the kife slitting the gullet of the oversized tweed Snapper 8) gees I'm generous but I'm building brownie points for the afterlife.

oops just reread this and it might be taken as being a smartass...and I'm not...
no crap meant here and I appreciate all I can learn from you Volvo and I'll swab your decks too.

Slip over to Morgans at Scarborough. You can see the boys in action next to the fresh fish section. Give em a call first & find out what time they will be filleting.

    Re: Filleting fish professionally

I did the fish filleting course at Sams a year or so ago, (with Craigie) and it was great. However, due to Sam's recent demise, I do not believe they offer any of their courses these days. If you want to see a pro fillet however, just go to Sam's at Hamilton (yes, they are still open) and watch the guy fillet a zillion fish from behind the glass. They do it all day everyday. I've bought whole fish from there before and asked them to fillet it too, just watch them go - they are super fast and no fish goes to waste.

    Cheers,
    Hutcho

This WAS the work area Sam's used to utilise for their fish filleting course.
