Well for basic cooking, ALWAYS cook in saltwater. The real stuff would be the best, otherwise rock salt added to fresh is ok. What i've been taught is bring pot to the boil and then throw crabs in. Sandies about 6 minutes should see you through, make shure they are submerged. For muddies about 13-14 minutes i think. There's all sorts of recipies and oe of the better ones is throw some chilli in with the muddies and other spices to marinate them. Beautiful Ooh and dont forger the beer or rum.

same as blackended said time the cooking time from the time the water comes to the boil and make sure you calm them in the freezer for about 20 min dont throw them in half alive or they will throw the legs and claws

sorry throw the crabs in when the water comes to the boil time them from when the water comes back to the boil throw then in a ice cold slurry to separate the meat from the crab shell

i use to cook crabs that way now i clean them first put them in cold salty water in pot then bring to boil leave them in the water and let cool tastes heapes better
Have you ever tried cleaning the crab and then steaming them in a steamer a good trick is to mix salt water in bottom of steamer with some brown sugar tastes great
Kill the crab as humanely as possible, I stick a knife down their throat & twist , remove the upper shell & all the guts.
Bring a big pot of salted water to the boil, chuck em in , 7 minutes from when it starts to bubble , pull em out & under the cold tap.
Thats it.
Muzz

The best way.
Brown sugar is good to put in water if you are boiling them as well about 3 to 4 table spoons in 6 liters of salty water.

At the risk of being called un-Australian, it is totally unnecessary to add salt to the water to cook muddies or sandies. It is an urban myth (might send this one to mythbusters) .
We have crabbed for many years and always cook them in clean fresh water. Salt makes no difference to the taste unless the crabs are cracked first or you like licking the salt off the outside of the shell .
But don't take my word for it, cook a crab in fresh water and see if it tastes any different.

I find that this is the best way of cooking them to if i aint boilling them. But most of my crabs that i catch now i marinate them. I take the carapus off and clean all the guts out then crack claws,legs and body. I make up a marinate out of soya sauce, honey, cracked pepper, garlic and damburi. I marinate the crab for at least 4 hours and place it into a electric fry pan or wok to cook for about 3-4 minuets.
