Handling makes or breaks the catch to me. For example, succulent flathead fillets caught, cleaned & eaten the same day. Not mine, I'll leave 'em to "set" uncovered in the fridge for a day otherwise they retain too much moisture & lack flavour. Same goes for cooking, simple pan frying in butter after rolling in flour & cooked only long enough so the thickest bit parts easily with a knife, a few minutes longer & I will gladly give my fresh fish meal to the mother in law. Did I mention lemon? Yes, I really like a squeeze of fish on my lemon. Mmmmmmmmmmmm geez I'm getting hungry.
Fresh tailor or whiting . I would love a feed of them right now and also a nice cold xxxx would go treat as well
Not just any Whiting, King George Whiting is the best, closely followed by Coral Trout, closely followed by WA Dhufish.

Notice that the mighty bara does not figure really well. Good sport fish, but overrated for the plate.

Trout (the coral type not the rainbows...they are only good for towing baits). Nannygui...or how ever its spelled, mackeral and Jacks.
Will not touch yellowbelly, murray cod, brown or rainbow trout with a ten foot pole but eel tailed catties ok.
