Does anyone have any pointers re bait, time of day etc.

Pike eels
Fresh mullet fillet or any medium to large sized livey should do nicely.
Live mullet works every time and also as its been said eels

well anything a live and relitivly big and a steel trace and about a 4/0 -8/0 depends wat size u want 2 catch.

There are more experienced people on here I'm sure, but I think they would agree live bait is the go. Mullet or even catties will work and in the lower reaches low tide is prob better
Live mullet for the alarm bells they send out and they also keep the pickers at bay. For dead bait you can't beat eel. I use Gamkatsu octopus size 10.......they stay sharp and they hold anything. Have the wire as long as the shark you're targetting. if they turn, they can tail your line if the trace is too short.

mate the mouth can be good at times. outgoing tide. good run (around the full or new moons). for this time of year (cooler months) i'd be opting for livies, cos as kev said they send out distress signals, and entice a bite that dead baits often wont - sthe bullies, like jacks, slow down in the cooler months. but theyre still there. trace of up to 400lb for the smaller boys - up to 7ft. even then you may get blown away now and then, but there are the odd monsters in there as well. i know for a fact there is the odd tiger lurking there too, but mainly in the warmer months. i'd make the trace one and a half times the size youre targeting. at least 10/0 game hooks. make sure theyre sharp. sharper than sharp - a bully's mouth is tough! try not to hurt em on the first run. you should be right on this gear for ones up to 7ft. beyond that, its up to you to put in the hours and find out. big shark fishing requires the longest of long hours and few people are willing to part with their knowledge that has taken so long to acquire. SO MANY things to consider with the big boys, so its best just to give it a go. good luck mate, and enjoy.

can pull some reasonable results there but don't make the mistake of rigging small or u will get done stick with cuzza's post on rig. Has been boys there know to munch up 400 pound but it is a rare for there. All the bait info is pretty spot on.
