Ive been trying for some tailor around local beaches and bays but I can only seem to get small ones can someone please give me some tips on how to catch the big ones.

You probably won't catch any marlin around your local beaches and baysIf you do want to catch some big fish, you'll need to buy some gear suitable and hitch a ride on someone's boat. Maybe join a local fishing club?

Try cut bait after dark in the surf gutters.
Mack tuna / bonito or a fresh slab off the choppers you caught at dusk.

As Gorrilla says, we usually find the bigger fella's come on the chew just after dark.
