What causes the difference in the colouration Tony? Does it have anything to do with water depth, as in coral trout?

Not really sure why some are more silver than others, we get about 1 in 10 that seem to be that color. Whether it is camo thing, say when feeding over sand they go more silver to match the surroundings, or they may have come in from the ocean, just not sure. One thing, when observing my pet jack, he changes color on a very regular basis. It seems to me more on his mood than anything. When he feels nervous or insecure he develops a very mottled color, when happy, say after a good feed, he tends to be a lighter color with prominent stripes. When you throw in a load of live fish or yabbies, he arcs up with fins erect and becomes the darkest deepest red.
So they obviously change a lot with thier mood. Some of the wild ones do seem to be naturaly more silver though. I will try and find a pic of a real silver one.

Yeah, a mate of mine had a coral trout in a tank. It regularly changed colours as well, and as you said, throw in some livies, and watch the colour change. Thanx for the info

just wouldn't touch the 10kg mark mate, as for taste i dont know, gave the fish away to a mate thats a chef, i wont see him until next year to find out...
