i've seen some big snapper but have never seen the scales pulled down more than 11kgs. i would have thought the fish head and shoulders would be the majority of the fish. someone has suggested 15kgs - do they get to that size around here?
Someone said 18kgs!!! That would have to be a world record the biggest i have heard of was a 14.3kg Whyalla monster snapper, 18kgs sounds a bit rich? I could be wrong though!
Gees it looks heavy and it looks old. My totally uneducated guess when I saw the pic was 20kg and 50yrs.
Now my young son wants me to ask what kind of shark it would likely have been.
Cheers from the Snapper safe BB (Snapper seem to be very safe from me...)
As a rule of thumb when costing out menus we used to estimate head frame & guts as 50% of the fish (for flat fish). At head and shoulders 6.6 kg the fish has to be close to 18 kg . This is only approximate but was a widely used template when I was a chef.
I have no idea how big they grow or what the record is.
thats my guess anyway
Cheers
