    Red Claw recipe


    Hi,

    I am looking for a red claw recipe. I wanted to basically serve them up at an entree...

    Hi Rosso - One nice way of serving redclaw is :- remove their heads. Cut their belly shell out with scissors, down each side. Remove the meat & then replace it in the shell (easier to eat at the dining table ) Place them under the griller to cook a few minutes.
    In a saucepan, heat 1 tab. sp butter -when melted, add 1 tab sp. S.R.flour. Mix well, add milk a little at a time until well mixed. Add enough milk for a pourable thickened mix. Add 1 teaspoon ginger, garlic chilli - to your taste. Add oregano, & salt to your taste. Half teasp tobasco sauce, 1 tab. sp tomato paste, 3/4 cup grated mature cheese, 2 tab sp. cream and 2 tabsp. brandy. Stir well. Place sauce over redclaws OR it is also nice, if you add the redclaw meat to the sauce BEFORE adding the cheese/cream to cook INSTEAD of grilling them. If you do that, serve it with a bed of boiled rice.

    gday rosso basically cut them in half lengthways and scoop the meat out of the tail leaving the head and tail intact,scrape out the head aswell and wash.cut the meat into pieces about 1cm,then just cook in a frypan with chopped capsicum and tomato with a dash of soy.serve back in the shell.tastes might vary so try different mixes you like to eat,you can also melt cheese on top as added extra taste. hope this helps in some way, cheers to your cookin.

    G'Day Rosso, I believe you should eat Red Claw after boiling in water for 10minutes remove from the shell and with salt and pepper,oil and vinegar with some fresh bread, very hard to beat, Cheers Whitto

    I give them ago. However, some look abit complicated to do since i will be camping...

    But i could always trasport the meat back home and try them.

    There is a very good book on the market called Camp Oven Cooking by Jack Absolem. #You should be able to pick it up in a good camping store or maybe find a copy in your local library. #He has a couple of very good recipes in it using yabbies that are very similar to red claw.

    You might find them inetersting and they suit cooking over an open fire.

    Well I am back from the BP dam and two things happened.

    A) it *bucketed* down on saturday night (a storm in the area or something)
    B) I got no redclaw. Oh well.

    But a few bass and yellas were caught. Enough for a feed, (smoked actually) but thats really the main thing eh?

    I'll go with Whitto's reply , though soak in the oil(Olive) n vinigar for awhile prior to eating.
    Fresh buttered Crispy bread Rolls, dont spare the Redclaw meat in em n if ya want a side salad just tos some diced lettuce ontop .
