    Cooking Fish in Batter

    Hello all

    There is nothing like a good feed of fish 'n chips and fish cooked in batter would have to be, for me, one of the best ways of eating it.

    Even while camping you can cook up a good feed of fish 'n chips in your trusty old camp oven.

    So, what's your best batter recipe. I am sure there are plenty out there.

    For me a cup or so of self raising flour with as much out of a stubbie of beer mixed in to make a smooth batter takes a lot of beating (actually you don't have to beat it much at all). You can throw in a handful of your favourite herbs as well but I don't usually carry them while camping in the bush or on the beach.

    Derek,

    I use a cup of Self Raising flour with a tea spoon of baking soda as well. Add a sprinkle of chilli flakes and mix in enough light beer until the consistency is reached.

    The SR flour and baking soda produce a really light, fluffy and crispy batter that is just fantastic.

    Make sure you cook in Canola oil - it produces the best golden brown colour.

    My favourite batter recipe would have to be this one.

    1 cup Self Raising flour
    1/2 cup Corn Flour
    1 Beer

    Parmesan Cheese (shredded)
    Chives
    Carlic
    1 Fresh Chilli
    S & P

    Mix both types of flour together with beer until right consistentcy is reached.

    Add garlic, chopped chives, finely chopped chilli and parmesan cheese.

    Season to flavour.

    The corn flour helps to make the batter light and crispy.

    The Bugman and Dominator have it right, and I did the same for years. But now I cheat.

    I pop down to Woolies and buy the Greens Tempura Batter. Add some Cajun seasoning, mix in very cold water and presto. mmmmmmmm Battered Fish. ???

    Looks like aint left much room for me lol as most has been said. Mcormick tampura batter (not Mrs Mcormicks) makes a nice batter. Cold water and mix to a light consistency, lightly flour and in hot oil.
    And as the name sez above, another batter which i bought by mistake for the Mcormick was Mrs Mcormacks batter. Very nice also but not as good me thinks as the Tampura batter.
    The colder the fluid ya use the better i think and equal parts of cornflour ta self raising as mentioned earlier is also very good to the extent is your batter doesn't draw much oil like some batters?? and yes does come out crispy.
