i love eating yabbies, both common and redclaw, usually just boil them up with a little salt just wondering if anyone has any recipes or ideas to add some variety to the crayfish
the best fishing in leslie that i have had has been in the last winter. me and a mate caught (and released) about 35-40 yellas in one freezing-- icey --bloody cold night. they were all caught on shrimp.
i have not had that much luch there this winter.

i am originally born and bread near allora, so i have done shitloads of fishin in leslie.
i have heard that caveman is also from this southern qld area

When we go to the Condamine we normally get a lot of yabbies and so when the fishing is quiet I have been know to eat some bait myself..
Try this one...the boys loved it last time we went:
Chilli Plumb Crayfish
For 50 plus crayfish
Ingredients
1 bottle white wine
1 jar plumb conserve
1 jar small crushed chilli
1 jar small crushed garlic
1 big bunch spring onions
Put crayfish in clean water and let them flush out for an hour or so, then cook in boiling water, remove heads keep claws and bodies.
Add wine to large deep pan over heat
Add plum conserve; stir regularly until plum and wine start to mix
Add 1 table spoon chilli and garlic (if you like it hot or its cold add to taste)
Stir until all plum is melted into sauce
Chop spring onion into 1 inch bits and add to sauce
Stir in crayfish bits and let simmer for 10 minutes or a couple of drinks worth, you can do a bit at a time and the sauce gets better as you go, also have dropped in a couple of peeled eel tail catties after the yabbies and they taste pretty good too.
Serve on rice or eat out of pan…taste great on the banks of the Condamine with a rum and coke...

yeah i do the same with muddies as well
I get about 80 ml water and the same of worstershire sause
crushed garlic 3 cloves
100ml of sweet chilli sause
cracked pepper
mix all in a pot and bring to a very good boil
throw in the redclaw after stabbing with a knife
or crack mud crab shell with a heavy knife
put lid on it (very important)
shake as it boils/steams to get juices over all of it
it takes about 5 mins and there done
keep topping the mixture up with water to prevent it caramelizing between each
batch
Having tried this you may become addicted to this recipe
and will want seafood all the time this way
You may even dine at the best seafood restaurant in town and tell the chef
his meals are crap

Ingredients
15 lb Crayfish
4 x Ears of corn
15 x Red potatoes cut in half
4 x Lemons cut in half
10 lb Seaweed dipped in ocean water
Method :
Build a fire and cover with sandstone rocks. Cover with seaweed. Cover with chicken wire. Cover with crayfish and potatoes. Cover with corn and lemon halves. Cover with more seaweed. If seaweed dries out during cooking pour ocean water on top.
