To serve (6) 1 stubby, tspoon of bicarb,1/2 tspoon custard powder, 2 tspoon oil, 2 cups plain flour, mix it up and put it in the fridge a while, then beat up 3 egg whites with the drill and add them to the mix just b4 use.
or for a lighter crisper batter, instead of 2 cups plain flour, go 1 cup plain, 1 cup corn flour.

This is the one i use, a Sally Jenyns recipe, yummooo
Although it says one kilo of fillets this recipe makes a heap of batter. oh I don't cut the fish up into cubes, have found this great with whiting, and not too good with the oily fish like tailor.
I kg of fresh fillets.
Plain Flour
Oil for Deep Frying
BATTER:
2 cups full strength beer
2 cups flour
2 teaspoons salt
2 egg whites, whisked until stiff
Cut fish into 3cm x 2 cm chunks. Dry with paper towel and set aside.
Mix flour, salt and beer into a batter. Never over beat batter a few lumps are harmless. Chopsticks are a handy tool for mixing batter. Set aside for half an hour.
Gently fold in egg whites
Heat oil in deep heavy pan or wok
Fry in hot oil until golden brown, dont crowd pan.
Drain well and serve with plenty of cut lemons and tartare sauce.
Easy tartare sauce: mix gherkin relish into egg mayonnaise with chopped parsley, capers and onion.

simple one is:-
plain flour
add beer and ice cubes
the rest is " to taste "
ie:- if you want it golden, add the custad powder
if you want it crispy, add beaten egg whites
if you like something different, add Cajun spice
or, even add shredded coconut.

Here is a simple one that works for me. Whatever amounts of flour you use make it half plain flour and half corn flour. Use enough beer to get a nice smooth batter and remember to let it sit for a while, at least half an hour.

Instead of Custard powder for colour try using the egg yolks. Much richer and less sweeter. The fish should be sweet not the batter.

wow... some of those are interesting. I've only ever done the basic, 1 whole egg, 1 cup of flour and add beer to preferred consistency (usually about 3/4 of a stubby). But then I'm fairly lazy. Still tastes good though.
Then I like a bit of sweet chilli sauce on the side.
Cook your fish on the bbq than wash down with beer Then add more beer . Minimum preparation and tastes a treat. Might have to have some tonight cheers Darren
Hi - we've tried several different recipes, and we can't beat this one for crispness and simplicity - not a beer batter though - maybe just hold a beer in your hand and alternate between mouthfuls!
We just use S.R. flour and add water slowly - whisk with a whisker gets the lumps out - next time, I will try 50/50 with cornflour though. Esme
