    Cooking on an open fire.

    What is the best way to cook fish on an open fire if you dont have a BBQ plate or grill?

    Here's one fer ya ..Get a wad of newspaper n soak them in water...
    Gut your Fish.Fill stomache cavity with some carrot, cellery,onion n whatever else you may wish to add..
    salt n pepper offcourse..
    Coupla slices down each side of fish n stick some butter in there..
    Wrap fish in in wad of newspapers, plenty of newspaper n dont be shy...
    Scrape ashes aside and bury the wad in the ashes..
    leave it there for hour, hour n halfe???depending on size of fish maybe a wee longer...
    Pull out bundle when you feel its been there long enough and peel back newspapers..
    First few layers will be burnt fer sure but rest will still be dry an moist..
    As you peel back newspaper all scales shoud peel off with paper..

    Wrapping food in Paperbark bark gives a great taste.
    Enamel plates make great frying pans.

    hot coals and just bury the food right in there is simple and easy.

    skewer smaller fish on a stick and hang in the hot smoke

    and alfoil / tinfoil if you have it can be used for just about everything!

    Make a spit out of whatever you've got handy. Can pretty much skewer anything on a spit. As already mentioned you can wrap stuff in wet paper or more conventional means like alfoil. Palm or banana leaves are also great for cooking in. Be careful using plants products to cook in though unless you're completely sure you know what the plant is.

    Wrap in alfoil, stick in hot coals.

    have you ever seen one of those fish grillers that look like a camp fire toaster

    they are great to cook any thing you like chops.steak.sausages.hamburgers chicken,fish,toast what ever your imaginatin can come up with you just rest in on to logs over the hot cols and turn when you need to

    Went camping with my mates a few years back and one of them that spent a fair bit of time up in Kuninarra(spelling?)simply put the fish(Redfin) straight on the coles without scaling or guting it,we were a bit apprehensive but the results were outstanding,the crusty coles laden skin was peeled back to reveal clean moist flesh,the gut shriveled up to a dry ball the size of a marble and pulled away with the skin,worth doing even if you have a grill/plate.
