    numis - whats your method?

    Have been playing around with various numis concoctions. Tried Lemon juce, lime juice both with onion and chilli. But tried a Thai type marinade/sauce I make for cooked fish or beef salad, and it comes up ace.
    Lime juice, Fish sauce, palm sugar or brown sugar, sliced red onion, chilli, garlic. Marinate slices of Spotted trev or queenfish in it, garnish with some coriander and eat with bread and a cold beer.

    Hey Pete,

    Numis...hmmmm..fooooodddd...beeerrrrs!!! Yummm..reminds me of Cape York a few years back and a sugar sack full of 6 & 8 kg Bludgers and GT's.

    We used for a starter brine the juice of Fehldbergs Pickled Onions...we added a heap of fresh squeezed lime juice and vinegar to top it up.

    We fine sliced the bludger, layer of fish, layer of sliced garlic clove, layer of fish, layer of lime, layer of fish, layer of onion, layer of fish, and repeated the layers to fill the jar, then we poured the brine in...in the fridge overnight for 12 hrs, whalla..nice firm white flesh..beer and yum!!!! My first mate doesn't go on chilli, but I like the sound of your recipie...have to give it a go next time
