As for lamb i gave up on lamb leg ages ago, shoulder is much better, i seal baking dish with foil and start at 180 for 30 minutes then reduce to 120 and cook for 4 hours, i then take foil off and turn heat back to 180 and brown, its to die for.
Up until about 2010 I used to buy all my meat from butchers. It was around then that I noticed the quality of meat coming from Coles and Woolies really took off.

Yeah go figure right..!...I never hear a peep about the massive amount of bait thats netted and trawled for fish meal and bait and prawns despite it being the biggest fishing take in the country...

Last trip we saw a few trawlers parked up off Dunk island....then of course you get the Facebook posts on local pages asking why there is tonnes of small dead fish washed up all along the high tide mark along the beachs.....also lots of bait netting in my area from Hinchinbrook to Innisfail and surprise surprise we dont even bother fishing the local estuaries for Barra anymore..doesnt help that Barra are also netted in some areas here including the bay that the boat ramp is in....The Mission beach estuary ,the Hull River is affectionately known as "The Heartbreak Hull"....

Also a few years back there was a 3 year ban introduced in South Australia for snapper fishing...Western Australia is now proposing a 9 month Ban on Dhufish and snapper fishing because the dermersal species have collapsed

Yet in WA 65% of fish are allocated too the Commercial sector and the biggest Exporter (Kallis brothers ) who exported Lobster and snapper is now owned by a Chinese conglomerate...

So we let a chinese conglomerate destroy the fishery so a bloke on the street that owns a boat and supports the local tackle shop cant even go out and catch a feed of fish...?..

It does my head thinking about this stuff and how royally screwed over the average rec fisher who wants to catch a few fish for his family is becoming....as well as fisheries not seeming to try and tackle the management with a wholistic picture in mind..

Hear you mate , guess having had the pleasure of slaughtering my own be it Beef Lamb or Pork in past years and knowing how tasty killed and cut up at certain age the meat can be as well as having worked as a Cook (not a Chef lol).
Also Most meat purchased nowdays is either Lamb or Pork as Missus doesnt eat Beef although i do , i do have a good idea what certain meats should taste like and if it should be chewable or not..
No dissrespect Mate in any way at all and maybe where you worked yous cut n distributed good stuff but every now n again getting a leg of lamb that shrinks to a third or near that of it size to me sez something ..
Maybe excess moisture infusion in my purcahses lol and first time ive heard of Moisture infusion ey ??..

We've just recently got back from a month at Chermside, shopped there nearly daily, and was surprised daily at the price of seafood at that shop, was going to take photo's of it, but never ended up doing so. Was outstanding to see what the price of seafood was worth.

Bad mate, I couldn't fathom how they'd charge so much for a fillet of fish. So glad we've got the ability to catch our own.
    Cheers
