    Dignity's reply covered most I reckon...the point about drying fish first is a good one...we also now brain spike, bleed and ice well upon capture ..I also keep my stainless fillet table really clean during the process so as my fillets dont need to be rinsed they havent been wet and freeze really well...

    We also texta on the date and fish type ..we ate some 12 month old deep frozen Red Emperor the other day...it still tasted beautiful...

    The missus only uses bags these days, its quicker and easier for her...different sizes just bought off Ebay..

    Chris, also potato chips, nuts, most things in those thin aluminium foil packets or plastic can be resealed, usually the pump doesn't work well but push most of the air out and seal. Especially nuts, we buy several varieties and make our own mix up, some of which goes into a jar for limmediate use, the rest is cryovaced to stop them going rancid over time.
