Hi all havent posted for years..just tried to google but didn’t find an answer..is it legal to fillet your catch while offshore? I fish both Qld and Nsw. Somewhere in the back of my head I remember it is illegal in NSW due to not being able to prove undersize fish. Unsure though

Unfortunately you may have missed this section. Edit: Oops, misread your post.
Alter the length of a fish or invertebrate by filleting/ shucking and/ or removing the head/ shell until well away from the water. This rule does not apply at areas normally used for cleaning fish such as boat ramp cleaning tables, if the fish are for immediate consumption or immediate use as bait, or for fish that do not have a legal length. You may clean fish by gilling and gutting only.
To add to dignity’s post. Once filleted don’t put them back on the boat for any reason. One day coming into Mooloolaba we stopped at the Kawana side to fillet the fish. One of the POB was staying on that side. Once filleted we put the fillets back on ice and headed to Mooloolaba where we launched from. Of course fisheries were waiting for us.
Formal warning, and only because the fillets were all over 40cm.
