So I basically build it outside of the boat and glass it in when it is already built?

Pretty much, get the shape right to make sure it fits well, glass it up, fix its position to the hull wall with glass tabs and then to finish it just glass it to the sides top and bottom, (do the bottom and the outside of the ends first) fairly simple and much easier to do that way rather than the lot inside the boat.

That's pretty well the way it's done. Fairly straight forward,
