Hey Ban it can be ok fishing up the front of a CC so long as your drifting, if your anchored thats a nightmare waiting to happen lines tangling, touching side of boat, going under engine absolute shit fight especially if there are two of you up the front one on either side and the lines go under the boat lol
You would want to avoid a bimini they are a piece shit does nothing but gets in the way, They flap in high winds, Water leaks right thru them in a storm, They block the sun only at mid day
maybe try spend some coin and get a decent canopy one without the straps going down to the back of the boat, You can also buy centre cabins basically a centre console with a mini cabin kind of like a luxury centre console good for kids to sit inside the cabin check out Disorderly's thread he just had one built

Also, where do you intend to fish? What type of fishing? I think both are important considerations too due to different boat configurations.
For example, are you needing to cross white water bars, or will you be in a lot of sloppy choppy water drifting? Anchored vs drifting will impact a lot too.

Fishing 4 blokes in any mono cuddy cab 6m of less isn’t pleasant. 6m cat with a walk through transom is probably the best option or a Centre cab boat.
