I had the same problem with my Lowrance 7 touch but I only fish shallow water. I am now fairly happy with the results , it was just by trial and error of moving the transducer down and trying it out on the water until I was happy with the reading.
I don't have a furuno but consider turning bottom lock off and instead setting upper and lower limits then make sure you scroll speed is on max, my humminbird the scroll speed is out of 10, so I have it set on 10.
by setting limits too you use maximum pixels within the set area, bottom lock and zoom don't do this, they are easier to do quickly but not as good.
so I often fish around 30m, I have my upper limits at 8-12m and my lower limit at 35m when at that depth.
You will never outrun a sounder. Compared to the speed of sound you might as well be sitting still. If it isn't working there is a turbulence/air/mounting issue. In flat water I can do 80+ Kph and maintain an echo. In offshore conditions 40 - 50 no worries. Unit is a gp7000f but that is of no consequence. It all comes down to the transducer location/install.
Say Scoota if in brisbane who would you recommend to sort transducer set up problems.
