It would have to be a toss up between grinners and trigger fish. Annoying bloody things.

Yeah chinaman , but the fish I hate the most is those rotten 5-8 ft sharks on overnighters who turn up and basically eat every large mouth nanny or red you hook up.

I'm going to disgust a few people here, but my pet hate is marlin, yes marlin. Too big, too fast and too tiring, and to top it I don't eat them. Luckily I have only run into a few smaller ones 70-100kgs, Hate to know what the big one will do.
They knock your level of stamina around, take ages to come in , if they do that is and take precious fishing time out of your day. Sometime the load on the rod is too great and lifting it out of the holder is asking for trouble. So busting of and saving what you have left is the only choice.
And they always manage to load up when u got a YFT out back.
