I think it would go down nice on a bit of BBQ grilled Chicken as well
This goes great on Prawns as well as Steak and can be used on it's own as a dip with Water Crackers.
1 Bowen Mango
splash of Balsamic Vinegar
splash of olive oil
juice from ½ Lime
tea spoon ( full ) finely diced fresh ginger
tea spoon ( full ) finely diced fresh garlic
tea spoon palm sugar... optional for sweetness and flavour
handfull rough chopped fresh Corriander
salt and pepper to taste. ( optional chilli's ½ tea spoon )
Cut mangoes into smallish pieces ( skin off ) and place in container that you can use a
Barmix in. Add all other ingredients and blend for a minimal amount of time, do not
Puree' to juice...... !!
Best to still see small lumps of Mango. This is best made the night before consuming, and placed in fridge. Cover container with Glad Wrap.
This makes about a cup full... enough for dressing 4 - 6 steaks, or many prawns.
Sorry for the late post, as summer is 1/3rd the way through, but mangoes are still plentifull.

I have discovered the new " corriander " paste, in a tube..... $4 but will last a while and works well with the salsa.

Love salsa on fish, especially nice big fillets/steaks of Swordfish and Tuna
Yep, had some tonight, a couple of nice Swordy steaks and some mango salsa, after a couple of KG of local Lake prawns.
