I wonder which is better, fishing at the peak of a offshore reef or edge?

Really depends what species you are chasing????
You will get more flathead on the edge, near the sand
you will get more tusk, pigfish & seargent baker on the rocks,
not that you want the sarges.
Most of our target fish like some structure.

generally you would try to fish from upcurrent into the rising side of a reef

Agree... try up current fishing back on the face of the reef as a lot of fish like the pressure wave of the reef along with the ability to zip in and out and get bait fish etc.

Having done a lot of spearfishing you see the fish in nooks and crannies of the reef rather than sitting on the top. Schools can be different and generally cruise around but still prefer to have the protection from predators of one wall. If you ever find small deep hole, they can be full of all sorts of fish.
