    Cheaper knife in boat - so no tears when it sinks.

    At home buck, swibo and blade runner all touched up before use.

    I use heavy kitchen scissors on the bones - this keeps the edge on the knife.

    For steaks on the bigger fish can't go past the bandsaw - this doesn't get as much use as i would like though.

    If you buy a cheap bench wheel grinder, that will make a butter knife cut through brick. The knives tend to have a limited life though. I'm with the plenty of cheap ones.

    Dexter Russell are good knives as well.
    either full stainless or the wooden handled carbon variety which i have both

    Best value I could find was F Dick at Southport Trwaler Supplies. Around $50. Turns out they dont float though!
