Fresh or salt??
Best hideaway I know of that is under- populated most of the year is Sundown National Park near Glenlyon Dam, Stanthorpe / Texas area. A lovely section of Pike creek runs through there that holds decent cod and yellowbelly.
Salt water rivers to camp on that suit you are sadly very hard to locate south of Rainbow Beach.

mt mee near dayboro. Rocky hole is a great swimming spot and some good 4wd tracks to play on too.

Depends on what you call south QLD,but you can camp just south of Woodgate Beach (south of Bundy ) in the National park almost on the beach.You can also drive on the beach there.
