    Lansky Knife sharpeners

    Hi All

    I'm after a bit of advice from people who have used these Lanksy Knife sharpeners. My knife sharpening skills are non-existent, and this system looks almost fool proof.

    Can someone shed some light on how good these are? Do they keep a good edge on the knife etc? How long to the stones last etc? Are they as easy to use as the demonstration or am I kidding myself?

    Also if they are the ducks nuts, should I be investing in the plan type or the diamond type? I don't really understand the difference. I'm after the one that is going to get the sharpest edge and last the longest.

    Hi Pazz,

    I bought a basic set which came with 3 stones (fine/medium/coarse) and have restored the cutting edges on all of my knives.

    The best feature of the Lansky system (which I found pretty straight forward to use) is that it enables you to keep the stones at a consistant angle to the blade which is half the battle in sharpening a knife with a stone.

    Now that the cutting edges are restored I hone them regularly with a steel.

    Pazz,

    I agree with jackson I also bought the basic set and now have sensational edges on all my knives.

    It is almost as simple and easy as the video very hard to go wrong.

    A great investment if you are like me and cannot use a stone properly.

    I bought the one with the 5 oil stones , i figured for the amount of times that i use it would last for ever. Rather than buying the diamond stones witch are good if you used it every day .
    The only thing i found a bit hard was to keep the knife tight in the holder when sharpening, other than that they get the angle right and my knifes are now razor sharp . They tell you what angle to use for what you intend using the knife for .
    In my books money well spent .

    I've never had much luck (skill) with stones or steels either. For quite a few years now, I've been using a Chef's Choice 450 Manual Diamond Hone to sharpen my knives, and I'm often surprised how sharp I can get the blades and how long my better knives will hold their edges. The little guide wheels hold the blade at the correct angle while you're sharpening, so you don't round the edge. Mine cost me $40 dollars five or six years ago, but they cost over $50 now by the look of it. I haven't personally heard anything about the Lanksy sharpeners.

    i bought the 5 stone set years ago (10 i think ) and it also came with a stand what you can screw to the bench i love it.
    the only bad thing is now i have the job of doing my mums and wifes kitchen knives once a year
    love the system works realy well.

    I own a Edgepro sharpening system and it bloody terrific and so it should be for the dollars , i've sharpened all my knives with it using the instructions provided and the very very sharp but i can across the artical in the link below and have re sharpened one of my knives this way to achieve a double edgeing of the blade!!!
    I used the exact techniques decribed in the artical only adding a super fine polish right at the end using a 6000 grit polishing tape to add life to the edge. To say this knife is bloody sharp is a vast understatement!!!!! It's is literally razor sharp and actually scares the hell out of me but i cant wait to see it fillet a mack later this season. the below artical is really worth a read and saving in favorites!!

    I have been using my lansky set for nearly 10 years, I have used it so much I have worn out and replaced 2 of the stones.
    I dont use it on big knives such as kitchen knives, for that I use a Warthog V sharp.

    Ive been a slaughterman since 76, in my mind all you need is one of those norton combination stones, ie the orange and the black and a steel, sharpen knife at 30% and steel slightly higher angle, the main factor i see is that all store bought knives are way too thick at the edge, we have a hollow grinder at work but failing this use a sanding belt to thin down edge but be carefull not to burn it, remove feathering by standing blade up at 45% to cut away feathers then go back to 30 when edge is clean, a knife that has not been steeled is next to useless, thats the key, sharpen it then steel it and dont cut on metal or ceramic, i find all the diamond products a waste of money, my shift gets through 1700 cattle a day and some have hides 1cm thick and if your knife has a thick edge no amount of fancy gear will get it running.. cheers

    Hi Pazz,

    Lanksy are great mate, can't go wrong. I got the normal stones then a diamond in ultra-fine which really puts a nice edge on. A butcher told me that you can use a stitched cloth wheel on a grinder to buff the edge when done for an ultra-sharp finish, haven't tried this yet but will once I'm back in Cairns.

    i have the same problem my dad's, brother, in-laws and my sisters also, but hey there easy as turning on the bbq anyone can do it, they do a great job

    I bought one of the ones from Aldi. Has a course and a smooth stone. If the smooth was the course, and then there was a true smooth, then may be ok, but it is rough as guts. Luck it did not cost much. Maybe other brands are ok.

    Electric knife sharpener = bench grinder - works a treat (+ a steel)
