    Whole baked cod

    Hi All

    I caught a maori cod a couple of weeks ago.

    I froze it whole and was thinkng of baking it, perhaps on the BBQ and may even try to source some bannana leaves to wrap it in.

    Questions:

    Should I try and defrost before cooking?
    Has anyone got a recipe for whole fish/ and or fish wrapped in bannana leaves.
    Does anyone know where I can get bannana leaves?

    Any help much appreciated.

    Well I had trouble sourcing bannana leaves so wrapped the fish in foil.

    In the gut cavity - lime segments, shallotts, coriander leaves and grated ginger. On the BBQ for 25 minutes (indirect heat under the hood).

    On to a platter and pour over a sauce of fish sauce, ginger, chopped coriander, shallots and lime juice.

    Served with stir fried buk choy.

    Lovely.
