    Re: crabs

I don't mate, I find the meat sticks the shell and does hold together that well.

But i'm sure some one on here has a method for it.

Fresh crab and cold beer is the best.

I found the same. fresh is best for sure but I dont go grabbing all that often and it would be nice to have some in the freezer. I have heard freeze raw, freeze cooked also freeze in a container full of salt water. hopefuly someone on here knows a way.

    Re: crabs

frozen cooked is the best way i have tried...but then i shell them and only use it for chilli crab or curried crab...not the same as fresh to just sit and eat...

    Re: crabs

Shelled cooked drained then frozen in a ziplock bag with about 1/4 cup of water with a teaspoon of sugar disolved in it. Sugar water mix stops the flesh from drying out during the freeze.

Was talking to a pro/amateur a couple of weeks ago. He sells the odd few to supplement his pension. What he does is cook them first then lays them on their backs in individual plastic bags in the freezer. I don't think he is too particular about sealing out the air either. He the thaws them when required for sale. No complaints. He says he learnt this method from pros.

    hi Hodges,
Do you mean he cooks them and lays them on there back without cleaning them or he cleans them as well?

freeze raw, but clean them first. Doesn't taste as good as fresh crab, but the best I've come across.

He cooks them first then lays them on their back in the freezer uncleaned. He says it has to do with retaining moisture within the crab. Worth trying as his customers keep coming back. I havn't tried it yet.
