quick bait question?

hey guys just a quick question. what is the best/correct way to butterfly baits such a mullet an herring iv never tried it befor an not really to sure on what to do. any help would be great.

I make a cut along the spine on both sides, as if you are filleting, but do not cut through the stomach or bottom of the fish. This should leave you a butterfly fillet without the rib cage and spine.

This may help, i try and use a two hook rig on all butterlied baits.
