i have never seen worms in any jew from up there but i also dont eat any under 90cm,small jew r known as soapies 4 a reason.

Soapies (as they are known) are fish up to about 3kg or so....and yes they dont taste to crash hot at that size.
From about 4kg through to about 10kg they are referred to as 'Schoolies' and in this size range they are fantastic eating particularly if caught off a nice clean beach.
Fish over 10kg are just referred to as Jew and are also great eating.
I havent ever eaten a serious monster jew so I dont know whether they toughen up or not.
YES I have seen quite a few small jew up here with worms.

So thats just legal this month and illegal next month.
Legal size is going from 45 to 75 cm 1st of March and a limit of 2.
Maybe thats why they changed the size because the smaller ones are no good to eat.
I don't worry about worms in the flesh, just cut those bits out.

You'd be surprised just how many fish actually carry worms (the majority) and you never get to know about 'em 'cause they are buried in the flesh. The ones you easily see are invariably of a reddish colour but there are some (most) that are a cream colour and are not seen easily. These are actually more prolific than the red ones but being coloured similarly to the fish flesh they go un-noticed.
They are not harmful to humans as they are killed in the cooking process............I reckon most folk who eat fish have eaten the worms at some time or other.
Sometimes, if the worm has got past the fish gut into the flesh, the worms will surface from the flesh if the fillets are left in the fridge overnight and they can be picked off.
The best way to check all fillets, (if you are squeemish about eating the worms) is to place the fillets on a sheet of glass and shine a strong torch up at the fillets from underneath............the larger worms can then be easily spotted and removed with tweezers. This is the procedure that some more reputable dealers will use commercially, not because the worms are harmful but simply to keep up customer relations.

Worms are very common in jew of all sizes. They are (I think) an encysted tapeworm. They are about the thickness of spaghetti and are usually coiled up in the flesh and have a pinkish or reddish tinge. This makes them easy to cut out. They do not affect the eating qualities of the fish. Like Pistol Pete I think the best eating size is from about 3kg up to about 10kg. Above 15kg the flesh is a bit coarse and only fit for fish cakes IMO
