On my canoe I used an old hummingbird that had a suction cap. It was a portable unit and so had the battery pack/case, making it easy to setup and use. It went between several boats so this was the easiest. It did tend to get knocked off the side of the canoe, especially in the snags.
You can also permently mount the transducer as a through hull (that's shoot through the hull, not actually poke through) on the inside of the canoe, which will prevent any damage to it.

have a look at the bottomline fishinbuddy designed for canoes, wharfs and ice fishing and some models are sidelookers too. Hummingbird also have an identical one too now in colour. Operates off "C" cell batteries so you dont need to cart batteries around.
