This is a dish that can be prepared while out fishing or the vege's and vinegar can be prepared beforehand and the fish added when out fishing
1 onion(preferably a red one)
1 green capsicum
clove of garlic
medium chili
cut these up into smallish pieces and place in a container with a lid
slice up a fillet of fish into about half a cm wide strips (traditionally trevally,queenies,tuna etc are used but I love to use trout or sweetlip)
add this to the other stuff
cover with white vinegar and add a couple of splashs of soy sauce and squeeze in half a lemon or so(not to much though) and mix it around a bit
put the lid on and chuck it in the esky for half hour to an hour or so(depends on the thickness of the fish)
when its ready the fish should basically melt in your mouth.
the good thing about this dish is that it's just so damned tasty that once you finish the first batch more fish strips or pieces can be added to the vinegar and vege mixture for a new batch.
