    How to Clean Dolphine Fish!

    Hey I saw this done when I was working on the boats, so I thought I would share it with everyone.

    I was working on South Pacific, and one day we went out to the wave rider boy off Stradebroke. We cleaned up with dolphine fish and on the way back me and the other decky were cleaning the fish.

    He showed me it was easier to skin a dolphine fish before you fillet it. What you do is get a sharp knife and run it about 2 mil deep along the back bone down around the neck and along the stomach of the fish.

    Grab a small peace of skin from the top quatar of the fish, around above the eye. Once you have a firm grip, simply tear back and the skin comes right off, nice and clean.

    Once the skin is off you can fillet the fish.

    Hows that for something different, give it a try next time you catch one.

    Thanks, was wondering about that, hope to get a few this year if/when they show up down this way.

    Have also done the same with flathead before too.

    Many years ago, had a bloke onboard a charter out of Sydney who loved green eyed sharks. He would start filleting from the head and just before the tail, he flipped the knife and kept going to skin it as well all in one movement.
    He was an expert at it.

    When i have caught dolphin fish, i gut them, head them, then cook them. I scrape the skin off while eating the flesh. Dont see the need to skin before cooking, comes off easy wehn cooked.
