    Not really a recipe as such.
    Well actually the first time I had it was in a restaurant so I suppose it is.

    Anyhow, you don't get a hell of a lot of taste of the kiwi fruit, but I guarantee the most tender callamari you've ever tried.

    Slice your squid tubes into rings.
    Slice a couple of kiwi fruit and bung it all in a bowl.
    Stir periodically over a few hours.
    Crumb your squid if you like and cook as per normal.

    I think the acid in the kiwi fruit cooks/dissolves or does something to the squid, but it's bloody good

    On ya Owen. Will give that a go. Would be interesting to know what chemical/process does the tenderizing. I don't think I've heard of Kiwi fruit being used as a tenderizer before.

    Enzyme reaction with proteins in the squid, paw paw will do the same.

    Try Kiwi Fruit on your BBQ Steak, unbelievable,apparently Kiwi fruit has a natural tenderizer in its makeup, Have tried it and it works, Cheers Whitto

    Milk is a good tenderiser as well, soak for 30 mins

    I use a combination of kiwi and milk, add to a blender and puree, cover the squid rings with the mix and place in the fridge for a hour and a half before cooking.

    Works well to tenderise before eating and adds a mild kiwi flavour to the squid if you don't use any additional seasoning.

    WARNING - Mate of mine did this but marinated overnight and the squid turned to mush. Very embarassing at his BBQ. Cheers.
