boiled in water is about as good as it gets I reckon, if you are going to add all sorts of garlic and butter and cheese and spices or whatever, might as well buy the cheap frozen ones (about $12 each) and keep the fresh ones for "proper" eating.
Been spoilt on eastern rock and personally thought that painted are very ordinary. I was later told that they are herbivores and that explains the lack of taste(some say a subtle taste) They get plenty of guernseys in curries when I get a hold of them they need all the help they can get.
For green frozen, thaw in salted water then add a bit of japenese Mirin to the water with the rock or sea salt. works well for prawns. Not sure about lobbies but with fresh muddies or sandies the Mirin in salted boiling water works a treat for the "Live Cook".
