    salting baits

    can someone please help me with a good procedure to salt bonito/tuna for cut baits. how log do i salt them for before freezing. any help appreciated. anyone salt mack tuna, got some today and im going tio give it a go

    To salt tailor, mullet, mackeral tuna or other oily flesh baits.
    Fillet whole fish, scale first if applicable. I do not gut the fish.
    Lay several sheets of newspaper on a flat surface, 5 or so sheets thick.
    Sprinkle a small amount of salt over sufficient area to lay fillets.
    Lay fillets skin down on top of lightly sprinkled salt.
    Sprinkle a moderate coating of salt over fillets.
    Allow to cure for 5 - 15 minutes, thicker the fillet, longer the time.
    Gently wipe off excess salt, wrap individual fillets in cling wrap and freeze.
    Wrapping individual fillets allows you to take only what you need for each fishing session.
    I use sea rock salt crystals, I try to avoid over-curing as it makes the bait too dry and tough.
    In my experience, salted fillets are at least as good as fresh when it comes to bait, particularly in the surf and off the rocks.

    does the salt have to be sea rock salt?
    Is there a rule against using ordinary salt?

    Pool salt, rock salt or a good one is ' Flossy ". All available from wholesale distributors of seafoods.

    Hi all I used to preserve my king prawn baits with a mixture of rock salt as well as sugar mixed in. The mix toughened up the soft peeled prawn, and the bream used to go crazy over it.-- Maybe they got hypo on the sugar!! lol

    only 5-15 mins. does this draw out sufficient moisture. i had someone tell me they salt their fillets for about 36 hours and then freeze? would like to salt mack tuna/boniton for tailor baits. are salted aits good for snapper?

    Thats as long as I cure for, don't like my baits too tough.
    Have found fresh best for snapper, tho' they do seem partial to salted mullet slabs. Haven't salted bonito, prefer to eat them, beautiful smoked. Reckon they would be excellent salted for snappr, however, certainly worth a try.
