A lot of older people i know love them and swear there the best freshwater fish to eat. You have to be a bit picky though as the ones you find in the dirty old muddy creeks taste muddy. I have taken the ones out of dams to them and they say there good. They usually skin it like sav said and fillet it and cook it like normal. Though i reckon if it aint got scales, i dont want it.
