Honestly, I've eaten salties that tasted like crap, and freshies that tasted like crap.

It is a personal taste thing though. Most yellas I've eaten are far better than bream or flatties, although they are best at 35 to 40 cm. Deeelish. I would love to catch a sleepy cod for the plate, but they are a bit shy. I'm told they are brilliant on the plate.

Now I know that you will all think I'm nuts...but...

my most favourite fish to eat is eel-tailed catties (dewfish, jewfish...whatever). i ate truckloads of these as a kid and still love them. As for saltwater fish - I can't tell the difference between an expensive one and a cheaper one...

FishinMission you need to sit down to a plate of fresh coral trout and you will be able to taste the difference.

We eat freshwater barra all the time the smaller ones just over legal are best, but we always brine them in saltwater. If your going to keep a barra bleed it straight away and keep it on ice. With big barra after you fillet them cut the fillet into smaller thinner pieces so they cook evenly, we also place the fillets in a brine in the fridge for about 2 hours, than tip out that brine and replace with a fresh one and leave in fridge over night. Have caught a lot of barra while in NT both salt and fresh and this method I've found gives the barra a great taste.
P.S. the final product is a combination of how well it's looked after, prepared and cooked.

    Cheers Foxie
