Crab Stuffed Flounder
Ingredients:
STUFFING:
1/4 cup fresh Green Onions, finely chopped
1/4 cup Butter
1 6oz can of Fancy Lump Crabmeat, drained and any cartliage removed
1/2 cup coarse Cracker Crumbs
2 Tlb.s fresh snipped Parsley
1/2 teas. Salt
8 Flounder Fillets
SAUCE:
3 Tlb.s Butter
1/4 cup Flour
1/4 teas. Salt and dash of Pepper
1 1/2 cups Milk
1/2 teas. Lemon Juice
1/3 cup dry White Wine
1 cup Swiss Cheese, shredded
1/2 teas. Paprika
Method:
In skillet, cook Onion in Butter until tender but do not brown. Stir into skillet Flaked Crab, Cracker Crumbs, Parsley, Salt and dash of Pepper. Place a spoonful of mixture in middle of Flounder Fillet and roll up. Place seam side down in a baking dish. Repeat.
In sauce pan, melt 3 Tlbs. Butter. Blend in Flour and 1/4 teas. Salt. Add Milk and Lemon Juice. Add Wine to saucepan (if desired, can be omitted but the wine makes it wonderful) Cook until mixture thickens and bubbles, stirring constantly. Pour over fillets.
Bake at 350 degrees for 40 minutes.
Remove from oven and sprinkle with Cheese and Paprika.
Return to oven until cheese melts or until fish flakes easily with a fork.
