    whats the right way to fillet

    hi guys what is the right way to fillet a fish is it down the back bone or flat along the fish i find along the back bone as the flesh moves away easier

    The right way is the way that works for you and achieves the most amount of flesh off the bones. I use either method depending on what sort of fish it is. Dart for example seem easier for me at least to approach from the backbone but tailor I find way easier and faster to fillet by the flat approach.( Generally coming in from behind the pectoral fin aiming forward then turning the blade and heading toward the tail.

    both ways depending on the size, big fish I attack from the backbone but say whiting you just slip the knifa along the sides

    agree with Poodroo - most fish slip the knife and run it along the the back bone then slip it over and take the bottom half out and leave the rib cage behind. Found mackerel and tailer to do the flat straight across method. Mainly because the flesh is so much softer and requires too much handling. For some reason found that this method with mackerel also made skinning them easier, dunno why.
