A popular combination of flavours and a great dish for party food. Pile battered fish onto a platter and serve with dipping sauce and fresh lime wedges ( Serves 4-6)

1 kg flathead fillets, boned and trimmed
flour
oil for frying
BATTER:
1 cup flour
1 1/4 cup water
1 egg
1 teaspoon salt
SAUCE:
1/2 cup bottled sweet chilli sauce
fresh lime juice

* For sauce, mix lime juice with bottled sweet chilli sauce to taste. Set aside
* Mix flour, water, egg yolk and salt to a batter. Set aside for 1/2 an hour.
* Heat oil in a heavy pan.
* Shake fillets in seasoned flour.
* Dip fillets in batter and fry in hot oil until golden-brown. Drain well.
* Serve goujons with a dish of sauce and cut limes to garnish.
