Spicy prawns with a dipping sauce
This recipe can be applied to pan fried or BBQ'd prawns.
It's tough to go wrong, just mix up the following marinade without the prawns in it so you can taste test. Do remember that the dipping sauce will add some more heat, or these will bite you twice. (Once going in and once coming out).
A little olive oil or melted butter
Cayenne
Curry
Hot sauce (I prefer Frank's Red Hot)
Seasoning salt
Pepper
Sugar
Lemon juice
There are no hard and fast rules here... everything is to taste. Start small, as you can always add more.
Now add the prawns to the marinade after they are cleaned and headed, but with the shell still on. Leave for several hours in the fridge or a cooler. A ziplock bag works great for mixing everything together. Now either cook in a frying pan, wok or on the BBQ. This only takes several minutes as you don't want to overcook them.
The dip is just mayonaisse, hot sauce and cayenne to taste. Have a frosty beverage of choice handy and a paper towel to mop the sweat up. Be warned... these are very addictive.
