BBQ Bream With Pesto
Pesto is a Mediterranean pasta sauce made with basil, pine nuts and garlic. Great flavours with fresh bream. (Serves 2)
2 Whole bream, approx. 400gr, cleaned and scaled
1-2 tablespoons prepared pesto sauce
1 ripe tomato, chopped
6 basil leaves, torn
olive oil
squeeze of lemon or dash of white wine
* Make 2 incisions on each side of bream, in thicker part of fillet.
* Spread pesto evenly over each side of fish.
* Seal fish on a hot BBQ plate for 1 minute each side.
* Remove fish to a double layer of foil, lightly greased with olive oil.
* Place 2 oiled foil slings beneath fish and crimp package closed.
* Cook bream package on BBQ plate, approx. 10 minutes, turning every few minutes.
* Test fish after 8 minutes.
* Remove fish from BBQ, carefully remove foil package.
* Use foil slings to transfer fish to serving platter.
* Garnish with fresh basil sprigs and serve.
