easy sweet chilli sauce
this is about as easy as it gets apart from buying it This makes about a litre so. Half it if you want but it will keep in fridge for week or 2.
In saucepan put 3 cups of castor sugar
finely grate about 4 cloves of garlic
same for knob of fresh ginger big enough to make about 2 teaspoons grated.
add sprinkle of hot chilli powder. and add a couple of chopped chillis if ya like but no seeds.
pinch of salt.
add about 300gms of sultanas
add 3 cups of white vinegar.cook on med heat untill sugars dissolves.
dont forget to stir once or twice.take off the heat and blend in processor or i use my lovely little tiffany hand blender ,put it in container in fridge and it will thicken slightly as it goes cold.if its left on heat to long you will very hot chilli jam.

Cheers craig, going to try that one for sure, as the missus and I are both rather partial to sweet chili sauce.
