whiting are a tasty morsel thats for sure .i cook mine whole .first make a couple of cuts diagonally down both sides from top of shoulder to near middle of anal fin but not through ribcage then make another cut from back of gut cavity to about halfway to tail up to the bakbone .this is to make him stand up,looks impressive to .Practise is the only way to get this right.then bit of salt and pepper ,lemon juice just to season as to not take away from the delicate flavour.
and then make a quick butter by melting some marg very slowly then adding about 2 thirds more oil to this .whack the butter on a tray roll the fish lightly in some flour after seasoning, sometimes i dont bother to season at all .then roll fish in the butter ya made on tray then under a grill on medium or in oven .dont forget to keeep basting the fish every 2 or 3 min with the extra butter on tray.the amounts of prepped butter needed is enough that it will not dry out, excess could mean spills,to baste i use one end of mine tongs like a narrow spoon.do two or three if ya can on one big tray.dont know how long as ive never used a timer just wait for his to eyes to pop 5 to 8 min and you should be on the money. PS youll need a decent flipper to put this on a plate, maybe you can use two.
