Scallop Chermoula
Chermoula is a Moroccan marinade that's absolutely delicious with seafood. Try the same recipe with fish fillets, prawns, squid or a combination of seafood. (Serves 2 as an entree)
Chermoula
1/2 brown onion
2 cloves garlic
1/2 teaspoon ground cumin
1/2 teaspoon ground paprika
1/4 teaspoon ground chilli
1/2 teaspoon ground turmeric
1/2 teaspoon salt
2 tablespoons roughly chopped parsley
2 tablespoons olive oil
* Puree all chermoula ingredients in food processor of blender.
* Remove chermoula to a glass or ceramic dish.
* Add scallops, mix gently and marinate for 1 hour.
* Cook scallops on a hot BBQ plate for 1 minute each side.
* Arrange scallops on a bed of salad leaves and serve immediately.
