Hi Wayneoro,
The Courier should tow the boat alright, but there are better vehicles around.
If you are looking at 4WD utes of that era, I can recommend the Rodeos in the Turbo Diesel. I had a 1999 model and used it to tow heavily loaded trailers quite a lot for work. My boat is only a 12.5" Aluminium, so doesn't present any challenge.
The Rodeo was quite powerful for a 4 cyl diesel, yet still comfortable enough to drive everyday (which I did) and quite reasonable economy.
One word of warning, steer clear of Petrol 4WD's, especially if you do a lot of towing. The fuel they use has to be seen to be believed.

any of the "jap" utes would be suitable just go with a factory turbo diesel

Sorry, no Rodeo wagon. Maybe you could compromise with a dual cab with canopy? ::)
I gues the closest thing in Holden's range would be a Jackaroo. Don't know anything about them myself, but I'm sure others will help.

99 Jackaroo is the same as the Rodeo. I use the Jackaroo 3.0 Turbo diesel to tow a 575 outsider on a dual axle trailer.
Should do the trick for you. They come in a comfortable SE version which may be better for the wife.
Mine set me back 23K some 10 months ago with 171,000 on the clock
